Grilled Chicken with Quinoa Salad:
Ingredients:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup quinoa
- 2 cups water
- 1/4 teaspoon salt
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup feta cheese, crumbled
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons freshly chopped parsley
Instructions:
- Preheat your grill to medium-high heat.
- In a small bowl, mix together the olive oil, salt, and pepper. Brush the mixture onto the chicken breasts.
- Place the chicken on the grill and cook for 6-8 minutes on each side, or until fully cooked.
- While the chicken is grilling, rinse the quinoa in a fine mesh strainer and place it in a saucepan with 2 cups of water and 1/4 teaspoon of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes or until the quinoa is tender and the water is absorbed.
- In a large bowl, mix together the cooked quinoa, diced bell peppers, cherry tomatoes, crumbled feta, lemon juice, and parsley. Season with salt and pepper to taste.
- Serve the grilled chicken with the quinoa salad on the side. Enjoy!
