Grilled Chicken with Quinoa Salad:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup quinoa
  • 2 cups water
  • 1/4 teaspoon salt
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons freshly chopped parsley

Instructions:

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, mix together the olive oil, salt, and pepper. Brush the mixture onto the chicken breasts.
  3. Place the chicken on the grill and cook for 6-8 minutes on each side, or until fully cooked.
  4. While the chicken is grilling, rinse the quinoa in a fine mesh strainer and place it in a saucepan with 2 cups of water and 1/4 teaspoon of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes or until the quinoa is tender and the water is absorbed.
  5. In a large bowl, mix together the cooked quinoa, diced bell peppers, cherry tomatoes, crumbled feta, lemon juice, and parsley. Season with salt and pepper to taste.
  6. Serve the grilled chicken with the quinoa salad on the side. Enjoy!
